The Chronicles of Creams

I've discussed La Toulousaine in these chronicles many times, praising its pastries, making love to its creams. Today on the walk home from work I chanced to stop in for a beignet with cream, which I've delighted in many times.  Today, it was no doubt amazingly tasty, yet it was also no doubt amazingly cold.  Is this quaint little French pastry shop making items ahead of time, freezing them, and then thawing them out?  Yes, it was still delightful, yet I must say there is something about this that doesn't sit right.  Or perhaps, if you must freeze, at least make sure the item has been properly brought back to room temperature.
